Avocado Toast with a Poached Egg


Simple, elegant, and absolutely delicious—perfectly poached eggs rest atop creamy avocado toast, finished with a hint of lime, a sprinkle of sea salt, and a crack of black pepper. Light yet satisfying, perfect for any time of day.

Ingredients


For The Toast:

2 slices of whole-grain or sourdough bread

1 ripe avocado

2 eggs

1 tablespoon white vinegar, for poaching

salt and pepper, to taste


For Garnish:

red pepper flakes, optional, for topping

fresh herbs, optional for garnish, like parsley or chives

lime juice, optional, for extra freshness


Instructions


Step 1

Start by toasting your bread slices until golden and crispy. Set aside.


Step 2

While the bread is toasting, slice the avocado in half and remove the pit. Scoop the flesh into a bowl and mash with a fork until smooth. Season with salt, pepper, and a squeeze of lime juice, if desired.


Step 3

Fill a small pot with water and bring it to a simmer. Add 1 tablespoon of vinegar to help the eggs set. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set but the yolks remain runny. Remove with a slotted spoon.


Step 4

Spread the mashed avocado generously over each slice of toasted bread. Top with a poached egg. Season with salt, pepper, and a sprinkle of red pepper flakes, if you like.


Step 5

Garnish with fresh herbs and serve immediately. Enjoy your perfect, creamy avocado toast with a runny poached egg!
