Velvety, elegant, and effortlessly French. This classic French pea soup is a perfect balance of freshness and richness, featuring tender peas blended into a smooth, creamy texture with a hint of herbs and a touch of sophistication.

Ingredients
2 tablespoons unsalted butter
1 medium onion, finely chopped
2 medium leeks, sliced and washed, white and light green parts only
1 clove garlic, minced, optional
4 cups fresh or frozen peas
4 cups vegetable or chicken stock
1 small potato, peeled and diced, optional for extra creaminess
1/2 cup heavy cream or crème fraîche, optional
salt and freshly ground black pepper, to taste
For Garnish
fresh mint leaves, chives, finely chopped, or croutons
Instructions
Step 1
In a large pot, melt the butter over medium heat. Add the chopped onion and leeks. Cook, stirring occasionally, until they are softened but not browned, about 5-7 minutes.
Step 2
Add the minced garlic (if using) and sauté for an additional 1-2 minutes until fragrant.
Step 3
Stir in the peas and diced potato (if using), then pour in the vegetable or chicken stock. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, or until the peas and potatoes are tender.
Step 4
Once the peas are tender, remove the pot from the heat. Use an immersion blender to purée the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a blender and purée it, then return it to the pot.
Step 5
For a richer texture, stir in the heavy cream or crème fraîche.
Season the soup with salt and freshly ground black pepper to taste.
Step 6
Ladle the soup into bowls and garnish with fresh mint leaves or chopped chives for a bright, fresh flavor. Add croutons for some crunch, if desired.
