This Spring Tetrazzini is a gentle nod to the season—fresh asparagus and sweet peas folded into a silky, light cream sauce with pasta and just a touch of cheese. It’s unfussy but elegant, the kind of dish that celebrates simplicity while still feeling special. Perfect for a breezy spring lunch or a cozy evening meal.

Ingredients
2-3 cups cooked chicken breasts, diced
12 oz bag wide egg noodles, or 4 cups or leftover noodles
1 cup dry white wine
2 cups chicken broth
1 cup heavy whipping cream
3 tablespoons butter
1 medium onion, diced
3 tablespoons flour
3-4 cups mushrooms, sliced, 1 package
1 bunch of asparagus, chopped into 2-inch pieces
1/2 cups frozen peas
2 tablespoons fresh dill or thyme
1-2 cups emmental or gruyere cheese, shredded
1 cup parmesan, grated
1/2 cup panko bread crumbs
Instructions
Step 1
Preheat your oven to 450°F (232°C).
Step 2
In an oven-safe large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the sliced mushrooms and cook until they are browned about 5-7 minutes.
Step 3
Sprinkle the flour over the onion and mushroom mixture, stirring to combine. Add the diced chicken and cook for an additional 2-3 minutes, until the chicken is heated through
Step 4
Increase the heat to high. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom of the skillet. Add the chicken broth and bring the mixture to a boil. Let it cook for about 5-7 minutes, or until the liquid begins to thicken.
Step 5
Stir in the cooked noodles, frozen peas, and asparagus mixing until well combined. Add the grated gruyère (or emmental) cheese, stirring until the cheese has melted and the sauce is smooth.
Step 6
Pour in the heavy cream. Stir to combine and let the sauce thicken slightly.
Step 7
Turn off the heat. Sprinkle the top of the mixture with breadcrumbs and Parmesan cheese.
Step 8
Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the cheese is melted and the breadcrumbs are golden and crispy.
Step 9
Remove from the oven and serve immediately, garnished with additional Parmesan if desired.
