These festive cookies are designed to steal the spotlight. Crisp at the edges and chewy at the center, they’re finished with delicate marshmallow webs that add a playful, dramatic touch. Chocolatey, nostalgic, and perfectly suited for Halloween gatherings, they’re as striking on the table as they are satisfying to eat.
Ingredients
For the Cookie Dough:
• 24 Oreo cookies, crushed into fine crumbs, about 2 cups
• 1 cup all-purpose flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1/2 cup brown sugar
• 1/4 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
For the Filling:
• 12 mini marshmallows, or 6 large ones cut in half
For the Marshmallow Web Topping:
• 1/2 cup mini marshmallows, or about 6 large marshmallows
Tip: If the marshmallow web feels a little too tricky, roll the cookies in Halloween sprinkles before baking for an equally fun, festive look. |
Ingredients
Make the cookie dough:
In a medium bowl, whisk together flour, crushed Oreos, baking soda, and salt. In a separate large bowl, cream butter and both sugars until light and fluffy. Beat in egg and vanilla.
Gradually mix dry ingredients into the wet mixture until fully combined.
Stuff the cookies:
Scoop about 2 tablespoons of dough. Flatten it slightly and press 1 mini (or half a large) marshmallow in the center.
Wrap the dough around it and roll into a ball, making sure the marshmallow is sealed inside.
Important: This is the perfect moment to roll them in those festive Halloween sprinkles! If you decide to do this you can skip step 7. |
Place onto a parchment-lined baking sheet, spacing cookies 2 inches apart. Chill for 15 minutes if dough is soft.
Bake:
Bake at 350°F (175°C) for 10–12 minutes, until the edges are set and tops are puffed. Let cool for 10 minutes on the pan — the marshmallow inside will be gooey!
Make the marshmallow webs:
In a microwave-safe bowl, melt 1/2 cup marshmallows in 10-second bursts, stirring each time, until smooth and stringy (about 30–40 seconds total). Let cool slightly (10–15 seconds) so it's stretchy, not liquid.
Tip: If you’re new to making a marshmallow web, it can be a little tricky at first! Here’s what I did: I dabbed a small amount of butter on the tips of my fingers on both hands, then dipped the fingertips of one hand into the melted marshmallows. From there, I gently pulled and mixed the marshmallow between my fingertips until it turned stringy.
The butter definitely helps with the stickiness, but fair warning — it’s still a messy project (in the best way). A little chaotic, a lot of fun, and totally worth it! |
Decorate with webs:
Dip your fingers or a fork into the melted marshmallow and stretch it over each cookie in thin strands to create a web effect.
Repeat until the tops are covered with creepy webs.
