Frosted Oatmeal Cookie

These frosted oatmeal cookies are soft, chewy, and topped with a sweet vanilla glaze.

Ingredients


Cookies

  • 1 cup unsalted butter, softened

  • 1 cup light brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs, room temperature

  • 1 tablespoon pure vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon nutmeg, optional, for extra warmth

  • 1/2 teaspoon salt

  • 3 cups old-fashioned rolled oats

Glaze

  • 1 cup powdered sugar

  • 2-3 tablespoons milk, or non-dairy alternative

  • 1/2 teaspoon pure vanilla extract


Instructions


Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.


Step 2

Beat butter, brown sugar, and granulated sugar until light and fluffy.


Step 3

Mix in eggs one at a time, followed by vanilla extract.


Step 4

In a bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Add to wet ingredients until combined.


Step 5

Stir in oats until evenly distributed.


Step 6

Drop dough balls onto baking sheets, leaving 2 inches of space between each.


Step 7

Bake for 10-12 minutes, until edges are golden. Cool completely on a wire rack.


Step 8

Mix powdered sugar, milk, and vanilla in a bowl until smooth. Adjust consistency with more milk if needed.


Step 9

Carefully spread glaze over cooled cookies. Allow it to set before serving.
