Homemade Balsamic Glaze

Balsamic glaze is simply balsamic vinegar reduced slowly until its natural sugars concentrate into a glossy, pourable syrup. The process requires little more than a saucepan and some patience, but the result is a versatile condiment with a deeper, sweeter flavor than vinegar alone. A small amount of honey can be added for additional sweetness, though a good balsamic vinegar will reduce beautifully without it.
Keep a jar in the refrigerator for finishing everything from Caprese salads and roasted vegetables to grilled meats, bruschetta, pizza, and even fresh strawberries. Because the glaze continues to thicken as it cools, the key is knowing when to take it off the heat.
Ingredients
• 1 cup good-quality balsamic vinegar
• 2 tablespoons honey, optional, for a slightly sweeter glaze
Instructions
Pour the balsamic vinegar into a small saucepan. If using honey, stir it in before heating.
Bring the vinegar to a gentle simmer over medium heat. Reduce the heat to medium-low and allow it to simmer gently for 15 to 20 minutes, stirring occasionally, until it has reduced by about half and coats the back of a spoon.
Remove the saucepan from the heat. The glaze will still appear slightly thin but will continue to thicken as it cools. Allow it to cool completely before transferring it to a glass jar or squeeze bottle. Store in the refrigerator for up to 1 month.
