Mimosa Pound Cake

Light, buttery, and infused with the bright flavors of citrus and champagne—this Mimosa Pound Cake is the perfect treat for brunch or any occasion.

Ingredients


For The Cake


  • 1 1/2 cups all-purpose flour


  • 1 1/2 teaspoons baking powder


  • 1/2 teaspoon salt


  • 1 cup unsalted butter, softened


  • 1 1/4 cups granulated sugar


  • 4 large eggs, room temperature


  • 2 teaspoons pure vanilla extract


  • 1 teaspoon orange zest, from about 1 orange


  • 1/4 cup fresh orange juice


  • 1/4 cup champagne or sparkling wine, for the mimosa flavor


For The Glaze


  • 1 cup powdered sugar


  • 2 tablespoons champagne or sparkling wine


  • 1 tablespoon fresh orange juice


  • 1 teaspoon orange zest



Instructions


Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or bundt pan.


Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.


Step 3

In a large bowl, use an electric mixer to beat the softened butter and sugar until light and fluffy, about 4–5 minutes.


Step 4

Gradually add the dry ingredients to the wet mixture, alternating with the champagne. Begin and end with the flour mixture. Mix until just combined.


Step 5

Pour the batter into the prepared pan, smoothing the top. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.


Step 6

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.


Step 7

In a small bowl, whisk together the powdered sugar, champagne, orange juice, and orange zest until smooth.


Step 8

Drizzle the glaze over the cooled cake, allowing it to soak in. Let the glaze set for a few minutes before serving.
