These apple spice mummy cookies are such a fun twist on a fall favorite. They’re soft, warmly spiced, and drizzled with white chocolate ‘bandages’ for that perfect Halloween touch. And those little edible eyes? Absolutely adorable. I love serving them at parties or packaging them up as gifts — they’re festive, delicious, and guaranteed to make everyone smile.

Ingredients


For the cookies:

2 1/2 cups all-purpose flour


  1 teaspoon baking soda


  1/2 tsp salt


  1 1/2 tsp cinnamon


  1/2 teaspoon ground ginger


  1/4 teaspoon nutmeg


  1/4 teaspoon cloves


  3/4 cup unsalted butter, softened, 170g


  3/4 cup brown sugar, packed


  1/4 cup granulated sugar


  1 large egg


  1 tsp vanilla extract


  1/2 cup sweetened or unsweetened applesauce


For decoration:

  1 cup white chocolate chips or melting wafers


  1 teaspoon coconut oil, optional, for smooth drizzle

Ingredients


  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.


    Mix dry ingredients:

  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.


    Cream butter and sugars:

  3. In a large bowl, beat butter with brown sugar and granulated sugar until light and fluffy (2–3 min). Add egg and vanilla, mix well. Stir in apple puree.


    Combine wet and dry:

  4. Add the flour mixture in batches and mix until just combined. Don’t overmix.


    Scoop and bake:

  5. Scoop into 1½ tbsp balls (or use a small cookie scoop) and place 2 inches apart. Flatten slightly with your hand.


  6. Bake for 10–12 minutes, or until edges are set and centers are soft. Cool completely on a rack.


    Melt white chocolate:

  7. In a heatproof bowl, melt white chocolate chips with 1 tsp coconut oil in the microwave (15-second intervals, stirring between). Transfer to a zip-top bag or piping bag.


    Drizzle “bandages”:

  8. Snip a tiny hole in the bag corner and drizzle back and forth over cookies in zig-zag patterns to create mummy "wraps."


    Add eyes:

  9. Quickly press candy eyes into the melted chocolate before it sets.
