The kind of breakfast that makes you sit at the table instead of rushing out the door. Toasted whole grain bread with a creamy avocado or mayo base, crisp lettuce, juicy tomatoes, and smoky turkey bacon — and to make it even more fabulous, it’s topped with a gorgeous egg over easy. Fresh, satisfying, and better for you, it’s exactly how I want to start my mornings.

Ingredients


2 slices whole-grain or sprouted bread, toasted



2 slices turkey bacon



1 large egg



1–2 crisp romaine or butter lettuce leaves



2–3 slices fresh tomato



1–2 teaspoon light mayo or mashed avocado



salt & pepper, to taste



a small drizzle olive, for cooking



Instructions


  1. In a skillet over medium heat, cook the turkey bacon until crisp. Transfer to a paper towel-lined plate.


  2. In the same skillet, lightly spray with olive oil if needed. Crack the egg into the pan and cook sunny-side up until the whites are set but the yolk is still runny, about 2–3 minutes. Season with salt and pepper.


  3. Spread mayo or mashed avocado on one side of each toast slice. Layer with lettuce, tomato slices, bacon, and the sunny-side-up egg. Top with the second slice of toast, press gently, and enjoy immediately while the yolk is warm and runny.
