Elegant, dramatic, and irresistibly nostalgic, cherries jubilee is a dessert that never goes out of style. Plump, juicy cherries are gently simmered in a sweet, tangy sauce, then flambéed for a touch of tableside theater. Served warm over creamy vanilla ice cream, it’s a simple yet stunning way to end any meal.

Ingredients
1 tablespoon unsalted butter
2 cups fresh or frozen dark sweet cherries, pitted
1/4 cup sugar
zest of 1/2 lemon or orange
2 tablespoons fresh lemon juice
1/4 cup Kirsch, brandy, or cherry liqueur, for flambéing
vanilla ice cream, for serving
Instructions
Step 1
Sauté the cherries:
In a skillet, melt the butter over medium heat. Add cherries, sugar, lemon juice, and zest. Cook for 5–7 minutes until syrupy and the cherries are softened but still hold their shape.
Step 3
Flambé:
Remove the pan from the heat. Carefully pour in the brandy. Using a long match or lighter, ignite the alcohol (stand back slightly). Gently swirl the pan until the flames subside.
Step 4
Serve:
Spoon the warm cherry mixture over scoops of vanilla ice cream. Serve immediately.
