Ingredients
• 1 tablespoon unsalted butter
• 2 cups fresh or frozen dark sweet cherries, pitted
• 1/4 cup sugar
• zest of 1/2 lemon or orange
• 2 tablespoons fresh lemon juice
• 1/4 cup Kirsch, brandy, or cherry liqueur, for flambéing
• vanilla ice cream, for serving
Instructions
Sauté the cherries:
In a skillet, melt the butter over medium heat. Add cherries, sugar, lemon juice, and zest. Cook for 5–7 minutes until syrupy and the cherries are softened but still hold their shape.
Flambé:
Remove the pan from the heat. Carefully pour in the brandy. Using a long match or lighter, ignite the alcohol (stand back slightly). Gently swirl the pan until the flames subside.
Serve:
Spoon the warm cherry mixture over scoops of vanilla ice cream. Serve immediately.
