Light yet luxurious, this gnocchi with shrimp in coconut lime sauce is a beautiful balance of comfort and freshness. Soft, delicate gnocchi and tender shrimp are enveloped in a silky coconut sauce, brightened with the zest and juice of fresh lime. It’s an effortlessly elegant dish, perfect for both weeknight suppers and relaxed entertaining.

Ingredients


1 package shelf-stable or fresh gnocchi, about 12–16 oz

1 tablespoon olive oil or butter

2 garlic cloves, minced

8 oz shrimp, peeled and deveined

1-1 1/2 cup full-fat coconut milk

zest of 1 lime

juice of 1 lime, about 2 tbsp

1/2 teaspoon salt, or to taste

freshly ground black pepper

1 heaping cup fresh baby spinach, loosely packed, (or substitute with spinach gnocchi, if desired)

1 tablespoon chopped cilantro or parsley, optional

1 tablespoon grated Parmesan or nutritional yeast, optional for umami boost

pinch of chili flakes, optional, if you want gentle heat




Instructions


  1. Boil according to package directions until they float (about 2–3 min), or pan-fry in a nonstick skillet with a bit of oil for a golden edge. Set aside.


  2. In a large skillet, heat olive oil over medium heat. Add shrimp and cook 1–2 minutes per side until opaque and lightly golden. Remove and set aside.


  3. In the same skillet, add a touch more oil if needed. Add garlic (if using) and sauté briefly (30 sec). Pour in coconut milk, lime zest, and lime juice. Simmer 2–3 minutes until slightly thickened. Season with salt and pepper.


  4. Add cooked gnocchi and shrimp back into the pan. Add spinach. Toss gently to coat and warm everything through — about 2 more minutes. Taste and adjust lime/salt balance.


  5. Sprinkle with chives, cilantro or parsley, and Parmesan/nutritional yeast if using. Add a tiny splash more lime juice at the end if you want it brighter.
