Individual French Apple Tarts

These little French apple tarts are as beautiful as they are delicious. Buttery puff pastry is topped with thinly sliced apples, sprinkled with sugar, and baked until golden and crisp. A quick brush of apricot glaze gives them a gorgeous shine, and a scoop of vanilla ice cream makes them the perfect ending to any meal.

Ingredients


1 sheet store-bought puff pastry, thawed


2–3 firm apples, like Honeycrisp, Pink Lady, or Granny Smith

2 tablespoons granulated sugar

2 tablespoons unsalted butter, melted

1/3 cup apricot jam

1 teaspoon water or brandy — optional, for thinning the glaze

1 - 1/2 teaspoon cinnamon



Instructions


Preheat the oven

  1. Preheat to 400°F (200°C). Line a baking sheet with parchment paper.


    Prepare the puff pastry:

  2. Unfold the puff pastry and cut into 4 to 6 rectangles or rounds (about 4–5 inches wide).


  3. Place on the prepared baking sheet.


Prepare the Apples

  1. Peel (optional), core, and thinly slice the apples. Sprinkle a little granulated sugar over the apples and pastry (about 1/2 teaspoon per tart).


    Bake:

  2. Bake for 25–30 minutes, or until the pastry is golden and crisp, and the apples are tender.


    Make the apricot glaze:

  3. While the tarts bake, warm the apricot jam in a small saucepan with a teaspoon of water (or brandy) until melted and smooth. Strain if needed for a smooth glaze.


    Glaze the tarts:

  4. As soon as the tarts come out of the oven, brush the apples and pastry edges with the warm apricot glaze for a shiny, professional finish.
