Ingredients


  • 1 cup pitted Medjool dates, about 10–12

  • 1 cup unsweetened shredded coconut, plus more for rolling

  • 1/2 cup raw cashews, or almonds

  • zest of 1 lime


  • juice of 1/2 lime


  • 1 tbsp coconut oil, melted


  • 1/2 tsp vanilla extract


  • pinch of sea salt


  • 1 tbsp chia seeds or hemp seeds for an extra boost




Instructions


Step 1

In a food processor, blend the cashews until finely chopped.


Step 2

Add the dates, shredded coconut, lime zest, lime juice, coconut oil, vanilla, and salt. Blend until a sticky dough forms. (If it’s too dry, add 1 tsp water at a time; too wet, add a bit more coconut.)


Step 3

Scoop out tablespoon-sized amounts and roll them into balls.


Step 4

Roll each ball in extra shredded coconut for a pretty, tropical finish. Chill in the fridge for at least 20–30 minutes to set.
