Why You'll Love Them
These are more than just a pretty snack. The healthy fats help balance blood sugar, the natural sugars provide sustained energy, and the lime offers that refreshing boost that makes them feel like a mini escape. Keep them chilled for the best texture—they’ll stay fresh for up to a week, though they rarely last that long in my fridge.
Prep Time: 10 mins | Total Time: 10 mins | Serves: 14
Ingredients
1 cup pitted Medjool dates, about 10–12
1 cup unsweetened shredded coconut, plus more for rolling
1/2 cup raw cashews, or almonds
zest of 1 lime
juice of 1/2 lime
1 tbsp coconut oil, melted
1/2 tsp vanilla extract
pinch of sea salt
1 tbsp chia seeds or hemp seeds for an extra boost
Instructions
Step 1
In a food processor, blend the cashews until finely chopped.
Step 2
Add the dates, shredded coconut, lime zest, lime juice, coconut oil, vanilla, and salt. Blend until a sticky dough forms. (If it’s too dry, add 1 tsp water at a time; too wet, add a bit more coconut.)
Step 3
Scoop out tablespoon-sized amounts and roll them into balls.
Step 4
Roll each ball in extra shredded coconut for a pretty, tropical finish. Chill in the fridge for at least 20–30 minutes to set.
