Parmesan Crusted Salmon

Salmon lends itself particularly well to oven roasting: the steady heat cooks the fish gently and evenly, while leaving the surface open for a flavorful crust. In this version, Parmesan is combined with fresh parsley, thyme, and lemon zest to form a savory herb topping that browns lightly in the oven while helping protect the delicate salmon beneath.
Ready in just 25 minutes, it’s an especially useful recipe for weeknight dinners but polished enough for entertaining. Serve the salmon with a simple arugula salad and lemon wedges, roasted vegetables, or small potatoes for an easy supper that requires very little last-minute preparation.
Ingredients
For the Salmon
• 4 salmon fillets (about 6 ounces each)
• 1 tablespoon olive oil
• ½ teaspoon kosher salt
• ¼ teaspoon freshly ground black pepper
For the Herb-Parmesan Topping
• ⅔ cup finely grated Parmesan cheese
• 1 tablespoon chopped fresh parsley
• 1 teaspoon chopped fresh chives
• 1 teaspoon chopped fresh thyme
• 1 teaspoon lemon zest
For Serving
• lemon wedges
• simple arugula salad
Instructions
Prepare the Salmon
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Pat the salmon dry with paper towels. Place the fillets on the prepared baking sheet. Brush lightly with olive oil and season with the salt and pepper.
Prepare the Herb-Parmesan Topping
In a small bowl, combine the Parmesan cheese, parsley, chives, thyme, and lemon zest. Stir until evenly combined.
Assemble
Divide the Parmesan mixture evenly among the salmon fillets. Gently press the topping onto the surface of each fillet.
Bake
Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the Parmesan is lightly golden. If desired, broil for the final minute to deepen the color of the topping.
Serve
Transfer the salmon to serving plates. Serve with lemon wedges and a sprinkle of fresh parsley.
