Inspired by the classic Peach Melba, these overnight oats bring the familiar pairing of peaches and raspberries to an easy make-ahead breakfast. The fruit is cooked briefly until the peaches are tender and the raspberries form a light sauce, then layered with creamy oats and finished with sliced almonds for a little crunch. Greek yogurt adds creaminess and protein, while chia seeds help thicken the oats as they rest.


Prepared in individual jars, they're particularly convenient for busy mornings and can be made the night before so breakfast is ready when you are. The recipe makes four servings, but it's just as easy to prepare a single jar when that's all you need.




What Is Peach Melba?

Peach Melba was created in the late 19th century by renowned French chef Auguste Escoffier in honor of Australian opera singer Nellie Melba. The original dessert paired peaches with vanilla ice cream and was later accompanied by raspberry sauce. That classic combination of peaches, raspberries, and vanilla is the inspiration behind these overnight oats.


Don't Want to Wait Overnight?

Despite the name, overnight oats don't always have to take overnight. For a single serving or a last-minute craving, substitute instant oats for the rolled oats and let the mixture stand for about 5 minutes. Instant oats are thinner and more finely processed, so they absorb liquid much more quickly than traditional rolled oats.


By the time you've finished washing up and getting ready for the day, breakfast is ready to go. Assemble it in a small jar or container and take it with you for an easy breakfast whenever and wherever you need it.



Ingredients


For the Overnight Oats

2 cups old-fashioned rolled oats

1 tablespoon chia seeds

2 cups unsweetened almond milk

1 cup plain Greek yogurt

2 teaspoons pure vanilla extract

1 tablespoon honey or maple syrup, optional


For the Peach Melba Fruit Layer

2 cups diced peaches

1 cup fresh raspberries

2 tablespoons water

1 teaspoon vanilla extract

1 tablespoon honey, optional


For Serving

¼ cup sliced almonds


Instructions


Prepare the Peach Melba Fruit Layer

  1. In a small saucepan, combine the peaches, raspberries, water, vanilla extract, and honey, if using. Cook over medium heat for 4–5 minutes, stirring occasionally, until the peaches are just tender and the raspberries begin to break down into a light sauce. Remove from the heat and allow the fruit mixture to cool completely.


Prepare the Overnight Oats

  1. In a large bowl, stir together the rolled oats, chia seeds, almond milk, Greek yogurt, vanilla extract, and honey, if using, until well combined.


Assemble

  1. Divide half of the oat mixture evenly among four small mason jars or serving glasses. Top with half of the Peach Melba fruit mixture, dividing it evenly among the jars. Layer the remaining oat mixture over the fruit, then finish with the remaining Peach Melba mixture. Sprinkle the sliced almonds over each jar just before serving.


Chill

  1. Cover and refrigerate overnight, or for at least 6 hours, until the oats have softened and the mixture has thickened. Serve chilled.
