Instead of cooking into a creamy porridge, the oats are gently folded as they set, creating soft, fluffy curds that hold their shape. The result is a texture that's entirely different from traditional oatmeal.


Naturally wholesome and endlessly versatile, scrambled oats are just as delicious topped with fresh berries, sliced bananas, toasted nuts, a drizzle of nut butter, or a spoonful of yogurt. They come together in just minutes, making them an easy breakfast for busy mornings while feeling special enough for a leisurely weekend brunch.


Let the Oats Set

The secret to perfectly scrambled oats is patience. Allow the oats to cook undisturbed for about a minute at a time before gently folding them over with a spatula. This gives them time to set into larger, tender curds instead of breaking apart into a creamy porridge.


Fold, Don't Stir

Resist the temptation to stir continuously. Gentle folding preserves the larger pieces and creates the soft, fluffy texture that makes scrambled oats unique. Overstirring will break the curds apart, resulting in a bowl that's much closer to traditional oatmeal.

Ingredients


1/3 cup rolled oats

1/2 ripe banana, mashed

1 large egg

1/2 teaspoon pure vanilla extract, optional

pinch of kosher salt

cooking spray or 1/2 teaspoon butter

Instructions


Prepare the Oat Mixture

  1. In a medium bowl, mash the banana until mostly smooth. Stir in the oats, egg, vanilla extract, if using, and the salt until well combined. Let the mixture rest for 5 minutes to allow the oats to soften slightly.


Cook the Oats

  1. Lightly coat a large nonstick skillet with cooking spray or melt the butter over medium-low heat.


  1. Add the oat mixture and spread it into an even layer. Let it cook undisturbed for about 1 minute. Using a rubber spatula, gently stir and fold the mixture over itself, just as you would scrambled eggs. Continue cooking for 5–7 minutes, stirring occasionally, until the oats are fluffy, lightly golden, and fully cooked.


Serve

  1. Transfer the scrambled oats to a bowl and enjoy as is, or top with any combination of Greek yogurt, fresh strawberries, blueberries, a drizzle of honey, chia seeds, or your favorite nut butter.
