Served as a classic first course, the crisp wedge of iceberg lettuce provides the perfect foundation for a rich, creamy dressing and flavorful toppings. This version is finished with homemade Gorgonzola ranch, crisp bacon, juicy tomatoes, and an extra sprinkle of Gorgonzola for a fresh take on the steakhouse classic.

Ingredients
For the Salad
• 1 large head iceberg lettuce, quartered
• 8 slices bacon
• 1 pint cherry tomatoes, halved or quartered
• 2–4 ounces Gorgonzola cheese crumbles, plus more for garnish, optional
For the Gorgonzola Ranch Dressing
• 1 cup sour cream
• 1/2 cup buttermilk
• juice of 1 lemon
• 1–2 tablespoons finely chopped fresh dill
• 1 teaspoon garlic salt
• 1 teaspoon onion powder
• 1 teaspoon freshly ground black pepper
• 2 ounces Gorgonzola cheese crumbles
Instructions
Cook the Bacon
Cook the bacon in a large skillet over medium heat until crisp. Transfer to a paper towel-lined plate to drain, then crumble into bite-sized pieces.
Prepare the Salad
Wash and thoroughly dry the iceberg lettuce before cutting it into quarters. Halve or quarter the cherry tomatoes and set aside.
Make the Gorgonzola Ranch Dressing
In a medium bowl, whisk together the sour cream, buttermilk, lemon juice, dill, garlic salt, onion powder, and black pepper until smooth. Fold in the Gorgonzola crumbles and stir until evenly combined. Refrigerate until ready to serve.
Assemble the Salad
Place each wedge of iceberg lettuce in a shallow bowl or on a serving plate. Spoon the Gorgonzola ranch generously over the lettuce. Scatter the bacon and tomatoes over the top, then finish with additional Gorgonzola crumbles, if desired. Serve immediately.
