Ingredients

For the burgers:

  • 1 1/2 lbs ground beef, 80/20 chuck for best flavor

  • 1 1/2 to 2 1/4 teaspoons Worcestershire sauce, 1 to 1½ teaspoons per pound of beef

  • 1/2 cup steak seasoning, for rolling

For assembling:

  • 4 slices American, cheddar, or your favorite melty cheese

  • 4 burger buns, toasted

  • Lettuce leaves

  • Tomato slices

  • Red onion slices

  • Pickles

  • Ketchup, mustard, mayo, or your favorite condiments

Instructions

Step 1

Form the patties:

In a bowl, gently mix the ground beef with Worcestershire sauce until just

combined.

Step 2

Divide into 4 equal portions and shape into balls.

Step 3

Roll each patty in the steak seasoning.

Note: Why we don’t press the center of the patties. Why some cooks press a little dimple before cooking: It helps the patty cook evenly and prevents it from puffing up in the center.

  • Effect on juiciness: If your goal is juicy, rare to medium-rare burgers, that dimple is optional. It’s minor, but some purists avoid it because they prefer the patty to stay fully round and thick.

Step 4

Cook the burgers:

Heat grill or skillet to medium-high.

Cook patties for 3–4 minutes per side, press them, flipping once, until desired doneness.

Add cheese in the last minute and cover to melt.

Step 5

Toast the buns:

While burgers cook, toast buns cut-side-down until golden.

Step 6

Assemble:

Add condiments and pickles to the bottom bun.

Top with the cheesy burger patty.

Layer tomato, onion, lettuce, close it up, and serve hot!
