Summer Tomato Pasta with Burrata is a celebration of cherry tomatoes at their peak. As they gently sauté, the tomatoes soften and burst, creating a rustic sauce that needs little more than garlic, olive oil, and fresh basil. Finished with creamy burrata, it's a simple pasta that lets a handful of seasonal ingredients do all the work.


Ready in about 30 minutes, this is the kind of meal that's equally suited to a quiet weeknight dinner or a leisurely meal shared with family and friends. Serve it with warm, crusty bread and a crisp green salad for an effortless summer supper.



Ingredients


12 ounces spaghetti

2 tablespoons olive oil

3 cloves garlic, thinly sliced

1½ pounds cherry or grape tomatoes

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

½ teaspoon dried oregano

¼ teaspoon red pepper flakes (optional)

¼ cup chopped fresh basil, plus more for serving

8 ounces burrata cheese

freshly grated Parmesan cheese, for serving (optional)



Instructions


Cook the Pasta

  1. Bring a large pot of generously salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve ½ cup of the pasta water, then drain the pasta.


Make the Tomato Sauté

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, until fragrant.


  1. Add the tomatoes, salt, pepper, oregano, and red pepper flakes, if using. Cook for 12–15 minutes, stirring occasionally, until the tomatoes soften and begin to burst. Use the back of a spoon to gently press some of the tomatoes, creating a rustic sauce. Stir in the basil.


Combine

  1. Add the cooked spaghetti to the skillet. Toss to coat, adding a splash of the reserved pasta water as needed to loosen the sauce. Continue tossing until the pasta is evenly coated.


Serve

  1. Divide the spaghetti among serving bowls. Tear the burrata into pieces and place it over the warm pasta. Garnish with additional basil and Parmesan, if desired. Serve immediately.
