Arugula and Fig Salad


Peppery arugula, sweet juicy figs, toasted nuts, and a drizzle of balsamic—this Arugula and Fig Salad is the perfect balance of fresh, vibrant flavors. Simple, elegant, and effortlessly delicious.

Ingredients


For The Salad

  • 4 cups fresh arugula, roquette

  • 6-8 fresh figs, preferably ripe and sweet

  • 1/4 cup crumbled goat cheese or feta, optional, for added creaminess

  • 1/4 cup toasted walnuts or almonds, optional for added crunch


For The Dressing

  • 2 tablespoons balsamic vinegar, preferably aged

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon honey, optional, for sweetness

  • Salt and freshly ground black pepper, to taste




Instructions


Step 1

Prepare the Salad:

Wash and dry the arugula leaves thoroughly and place them in a large salad bowl.


Step 2

Slice the figs into quarters or halves, depending on their size, and set them aside.


Step 3

If you’re using nuts, toast them lightly in a dry pan over medium heat for 2-3 minutes, stirring frequently until golden and fragrant. Let them cool.


Step 4

Make the Dressing:

In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and pepper. Taste and adjust seasoning as needed.

Step 5

Drizzle the dressing over the arugula and toss gently to coat. Add the sliced figs on top of the salad. Sprinkle the crumbled goat cheese or feta over the top (if using) for added creaminess. Add the toasted walnuts or almonds for extra crunch and flavor.
