Crispy Jerk Chicken Sandwich

Now this is how you do a chicken sandwich. Crispy, golden chicken breasts or thighs seasoned with homemade jerk spices are tucked into soft, toasted buns, layered with fresh greens, and a spicy mango chutney. It’s the perfect balance of bold flavor and comforting texture.

Ingredients
Jerk Buttermilk Marinade
4 boneless, skinless chicken thighs or breasts
2 tablespoons jerk seasoning, store-bought or homemade
1 cup buttermilk
For the Chicken
1 cup panko breadcrumbs, for extra crunch
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder, helps with crispiness
1 tablespoon olive oil, to coat the breadcrumbs
salt and pepper to taste
1 Cooking spray
2 tablespoons jerk seasoning, store-bought or homemade
For Assembly
4 brioche buns, toasted
mango chutney
1 Lettuce or arugula
1 sliced tomatoes
1 red onion, optional
Instructions
Step 1
In a bowl, mix the buttermilk with 1 tablespoon of jerk seasoning. Add the chicken thighs or breasts, making sure they're fully coated. Cover and refrigerate for at least 2 hours, or overnight for more flavor.
Step 2
Preheat the oven to 425°F (220°C).
Step 3
In a shallow dish, combine the panko breadcrumbs, flour, cornstarch, remaining jerk seasoning, salt, pepper, and baking powder. Drizzle the olive oil over the breadcrumbs and toss to coat (this helps them get golden and crispy in the oven).
Step 4
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the breadcrumb mixture, pressing down firmly to make sure the coating sticks well.
Step 5
Place a wire rack on top of a baking sheet. This allows air to circulate around the chicken, helping it crisp evenly. Lightly grease the rack with cooking spray to prevent sticking. Arrange the coated chicken pieces on the wire rack. Lightly spray the tops of the chicken with cooking spray (this helps with browning and crispiness).
Step 6
Bake in the preheated oven for 20-25 minutes, flipping halfway through. The chicken should be golden brown and crispy on the outside, with an internal temperature of 165°F (75°C).
Step 7
Toast the brioche buns. Spread a generous amount of mango chutney on the top bun. On the bottom bun place the lettuce, tomato slices, and red onion if desired, followed by the crispy baked jerk chicken. Top with the other half of the bun.
