Ingredients


2 cups rolled oats



1 cup canned pumpkin puree



1 cup unsweetened almond milk, or milk of choice



1/4 cup maple syrup, or honey



1 large egg



1 teaspoon vanilla extract



1 teaspoon pumpkin pie spice, or 1/2 tsp cinnamon + 1/4 tsp nutmeg + 1/4 tsp ginger


1 teaspoon baking powder



pinch of salt



1/2 cup chocolate chips, plus extra for sprinkling



Instructions


  1. Preheat the oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish or similar.


  2. In a large bowl, whisk together pumpkin puree, almond milk, maple syrup, egg, and vanilla until smooth.


  1. Stir in rolled oats, pumpkin pie spice, baking powder, and salt until fully combined.


  1. Gently mix in the chocolate chips, saving a few to sprinkle on top.


  1. Pour the mixture into the prepared baking dish, spreading evenly. Sprinkle remaining chocolate chips over the top. Bake for 28–32 minutes, or until set in the center.


  1. Let cool slightly before slicing. Enjoy warm, or refrigerate for up to 4 days.
