Roasted Eggplant Dip

Eggplant has an extraordinary ability to transform with heat. Roasted until completely tender, its firm, spongy flesh becomes silky and almost creamy, making it a natural foundation for dips and spreads throughout Mediterranean and Middle Eastern cooking. This version takes inspiration from that tradition while keeping the preparation particularly simple, allowing the roasted eggplant and fresh herbs to remain at the center of the dish.
Served slightly warm or at room temperature, it makes an elegant beginning to a meal with toasted bread, warm pita, or crisp vegetables alongside. It’s equally useful as part of a larger mezze-style spread or spooned alongside grilled chicken, fish, and vegetables. Best of all, much of the work is done by the oven, making this the sort of appetizer that feels considerably more elaborate than it is.
Choosing the Best Eggplant
Look for eggplants with smooth, glossy skin and a firm texture. They should feel heavy for their size, which is a useful indication that the flesh is still fresh and well hydrated.
Gently press the skin with your thumb. It should yield very slightly and spring back. If the indentation remains or the skin looks wrinkled and dull, the eggplant is likely past its prime.
Medium Eggplants Are Often Best
Very large eggplants can contain more mature seeds and sometimes have a coarser interior. Medium-sized eggplants tend to have tender flesh and are also easier to roast evenly.
That said, size matters less than freshness. A firm, glossy larger eggplant is a better choice than a soft or wrinkled smaller one.
Ingredients
• 2 medium eggplants, about 1½ pounds total
• ¼ cup (60 g) tahini
• 2 tablespoons fresh lemon juice, plus more to taste
• 1 small garlic clove, finely grated
• 2 tablespoons extra-virgin olive oil, plus more for serving
• ½ teaspoon kosher salt, plus more to taste
• ¼ teaspoon ground cumin
• freshly ground black pepper
For Serving
• 2 tablespoons pomegranate seeds
• 1 tablespoon finely chopped fresh parsley or mint
• toasted sesame seeds, optional
• warm pita or pita crisps
Instructions
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prick the eggplants several times with a fork and place them on the prepared baking sheet. Roast for 40 to 45 minutes, turning once, until completely tender and the skins are wrinkled and beginning to collapse. Let cool until comfortable to handle.
Cut the eggplants in half lengthwise and scoop the flesh into a fine-mesh sieve. Allow to drain for 10 minutes to remove any excess liquid.
Transfer the eggplant to a bowl. Add the tahini, lemon juice, garlic, olive oil, salt, cumin, and a few grinds of black pepper.
Mash and stir with a fork until creamy but still retaining a little texture. Taste and adjust the lemon and salt as needed.
Spoon the dip onto a shallow serving plate and use the back of a spoon to create soft swirls across the surface. Drizzle with a little extra-virgin olive oil and scatter the pomegranate seeds and fresh herbs over the top. Finish with sesame seeds, if desired. Serve with warm pita or crisp pita wedges.
