This refined take on overnight oats offers all the familiar flavors of a classic s’more—without the usual wait. Instant oats are combined with milk, cocoa, crushed graham crackers, and marshmallows, creating a smooth, spoon-ready texture almost immediately. A glossy magic shell topping sets into a delicate chocolate finish, adding just the right contrast. For a quicker finish, omit the magic shell and stir in chocolate chips. Its thoughtful, efficient, and unexpectedly elegant, it’s a breakfast that feels both comforting and considered.

Ingredients

1/2 cup instant oats

1/2 cup milk, dairy or plant-based

1 tablespoon cocoa powder

1 tablespoon maple syrup or honey

2 tablespoons crushed graham crackers

pinch of salt

2 tablespoons mini marshmallows

2 tablespoons chocolate chips, optional, if you are not doing the magic shell

2 tablespoons chocolate chips or chopped chocolate, optional for the magic shell

Instructions

  1. In a bowl or jar, mix the instant oats, milk, cocoa powder, maple syrup, crushed graham crackers, salt, and mini marshmallows (Short on time? Mix in the chocolate chips instead of the Magic Shell) until well combined. Let sit for 5 minutes to soften slightly.

  2. Meanwhile, (if you have extra time and are feeling fancy) melt the chocolate chips or chopped chocolate in the microwave in 20-second intervals, stirring until smooth.

  3. Pour the melted chocolate evenly over the top of the oats mixture.

  4. Place the bowl or jar in the fridge and chill for about 5-10 minutes, until the chocolate hardens into a crisp shell.

  5. Enjoy immediately after chilling for that perfect cold, creamy oats with crunchy chocolate topping.
