Ingredients
For The French Toast
2 eggs
2/3 coconut milk
1/2 teaspoon vanilla extract
2 thick slices of brioche
For The Whipped Cream
1 cup heavy cream, chilled
2 tablespoons granulated sugar, adjust to taste
1 teaspoon vanilla extract
For the Topping
1 can pineapple chunks or fresh pineapple
Instructions
Step 1
Whisk the eggs, coconut milk and vanilla together in a wide, shallow bowl. Dunk the brioche slices into the mixture, letting each sit in the bowl for 1-2 mins on each side to soak up the liquid.
Step 2
Melt butter in a frying pan over a medium-low heat until foaming. Cook the brioche slices for 3-4 mins on each side until golden and cooked through.
Step 3
In the bowl of a stand mixer fitted with the balloon whisk attachment add chilled heavy cream, granulated sugar, and vanilla extract. Whip for about 3-5 minutes.
Step 4
Divide the french toast between two plates, then top each with a dollop of whipped cream, and pineapple chunks.
