Bacon Jam

A rich, savory-sweet spread made with crispy bacon, caramelized onions, and a touch of maple—this bacon jam is the perfect indulgence for toast, burgers, or your next cheese board.

Ingredients


  • 8 slices bacon, chopped

  • 2 large onions, thinly sliced, yellow or sweet onions work best

  • 1/4 cup balsamic vinegar, or apple cider vinegar

  • 2 tablespoons brown sugar

  • 2 tablespoons maple syrup

  • 1 tablespoon Dijon mustard

  • salt and pepper to taste




Instructions


Step 1

In a large skillet over medium heat, cook the chopped bacon until crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and drain on paper towels, leaving the rendered bacon fat in the skillet.


Step 2

Add the sliced onions to the skillet with the bacon fat. Reduce the heat to low and cook the onions slowly, stirring occasionally, until they become deeply golden and caramelized. This can take about 20-30 minutes. If the pan gets too dry, you can add a little water or olive oil to prevent burning.


Step 3

Once the onions are caramelized, add the crispy bacon back to the skillet along with the brown sugar, balsamic vinegar, maple syrup, and Dijon mustard. Stir everything together and simmer over low heat for another 10-15 minutes until the mixture thickens and becomes jammy.


Step 4

Taste the jam and adjust the seasoning with salt and pepper. Allow the bacon jam to cool, then transfer to an airtight container. It can be stored in the fridge for up to a week.
