Carolina slaw is a crisp, refreshing side dish known for its balance of tangy and lightly sweet flavors. Shredded cabbage and carrots provide crunch, while a vinegar-based dressing keeps it bright and light. Unlike creamy slaws, this version is clean and zesty, making it an ideal complement to barbecue, grilled meats, or seafood. It can be prepared in advance, allowing the flavors to meld, and is a versatile addition to any summer table.

Ingredients
For The Slaw
1/2 head of cabbage, finely shredded
1/2 head of purple cabbage, finely shredded
2 large carrots, julienned
Easy Swap: Save time by using two bags of pre-cut slaw mix in place of whole cabbage heads. 30–40 minutes saved if you skip cooking the dressing and use pre-cut slaw mix |
For the Dressing
2/3 cup canola oil
1 cup sugar
1 cup apple cider vinegar
1-2 teaspoons salt
1-2 teaspoons pepper
1 teaspoon dried mustard powder
Instructions
Step 1
In a medium saucepan, combine the vinegar, sugar, salt, celery seed, and pepper. Bring to a boil, whisking, for 3–4 minutes until the sugar dissolves. Remove from heat and let cool.
Alternative: Skip cooking — simply whisk the ingredients together and let them sit until the sugar dissolves. |
Step 2
Shred the cabbage and carrots, or use pre-cut slaw mix to save time.
Step 3
Place the cabbage and carrots in a large mixing bowl. Pour the cooled dressing over the top and mix well. Let sit at room temperature until the cabbage softens and begins to shrink in volume. Transfer to a storage container and refrigerate until ready to serve.
