Ingredients
1/2 cup graham cracker crumbs
3 tablespoons cream cheese
1/2 tablespoon cinnamon
5 tablespoons carrots, uncooked and finely-shredded
2 tablespoons chia seeds
3 tablespoons coconut flakes, unsweetened
3 tablespoons raisins, chopped
3 tablespoons pecans, chopped
Instructions
Step 1
In a medium bowl combine the graham crackers, cream cheese, and cinnamon and mash together with a fork or with your hands.
Step 2
Add carrots, chia seeds, and 2 tbsp of the coconut (reserve the rest for later) raisins, and pecans. Knead the mixture together until well combined.
Step 3
Make 8 well rounded balls from the mixture.
Step 4
Finally, roll the balls in the remaining coconut or gram crackers, and coat completely. Place balls on a piece of parchment paper in a container. Refrigerate until the cream cheese has reset; at least one hour.
