Fresh, flavorful, and surprisingly light, these Healthy Mediterranean Chicken Burgers bring the bright flavors of the Mediterranean to the dinner table. Lean ground chicken is combined with spinach, oregano, dill, and red onion before being cooked until beautifully golden. A creamy whipped cucumber feta spread adds a cool, tangy finish, while crisp lettuce, ripe tomato, and thinly sliced red onion complete each burger with layers of fresh texture.

Ingredients


For the Chicken Patties:

1 pound lean ground chicken

1 cup finely chopped fresh spinach

2 tablespoons red onion, finely diced, optional

1 teaspoon dried oregano

1/2 teaspoon fresh or dried dill

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1 tablespoon olive oil


For the Whipped Cucumber-Feta Spread:

3 ounces feta cheese, crumbled

1/2 cup plain Greek yogurt

1/3 cup grated cucumber, squeezed dry

2 teaspoons fresh lemon juice

2 teaspoons chopped fresh dill

2 teaspoons olive oil

black pepper to taste


For Serving:

4 whole wheat burger buns

butter lettuce leaves

1 large tomato, sliced

1/2 small red onion, thinly sliced, optional



Instructions


Prepare the Whipped Cucumber-Feta Spread

  1. Add the feta, Greek yogurt, lemon juice, dill, olive oil, and black pepper to a food processor. Blend until mostly smooth.


  1. Fold in the grated cucumber. Refrigerate until ready to serve.



Make the Chicken Burgers

  1. In a large bowl, combine the chicken, spinach, red onion, oregano, dill, salt, and pepper. Mix gently until just combined. Divide into 4 equal portions and form into patties.



Cook the Burgers

  1. Heat a skillet or grill pan over medium heat. Cook the burgers for 5–6 minutes per side, or until they reach 165°F internally. Transfer to a plate and let rest for 3 minutes.



Assemble the Burgers

  1. Lightly toast the buns. Spread the whipped cucumber-feta on the top and bottom buns. Layer with lettuce, tomato, red onion, and the Chicken burger. Serve immediately.
